You will have to setup it up as a NAT box. Your Linux server should have two NICs. The first connects to your internal network, and the other connects to your Internet connection.
For starters, you can try running something like shorewall. It will give you a firewall + NAT functionality.
If you have a low-end machine that is unused (as low as a 80386), you can try running a floppy based distro like coyote.
