International Organsiation for Standardisation. The ISO initials come from the way it is written in French.
ISO sets industry standards for various items, including the threading of screws, process requirements for Service companies (the 9000, 9001, etc. series), country codes (IN = India, UK = United Kingdom, SG = Singapore) (iso3166), network standards (802.x), and also, the CD-ROM image format (iso9660).
When we talk about ISO in the context of software copies, we generally mean ISO9660, which is how an image that can be written to a CD should be formatted.
