In Ubuntu 10.04 there is a GUI tool for adjusting dual displays. Go to System -> Preferences -> Monitors. It should be there in 10.10 too. It is simple yet very flexible. If you use the clone feature then you will have problems if screen resolutions do not match for both displays. Use the extended desktop settings and keep each display resolution separate as per their individual capacity. First find out the acceptable resolutions of your projector from its manual.
