which mail servers do you guys suggest one should use? I have heard good things about qmail, but it requires a static ip. Exim isnt very popular and sendmail is a tad bit scary for me... anyone else got any suggestions?
I have used qmail and found out to be good. Others I haven't tried. Lot of info is available on qmail all over. Any mail server if it has to be live will need a static ip. I heard Exim is the one which can be configured as a smarthost, if you do not have static ip.

You can configure any of qmail, sendmail, exim and postfix with a smarthost. And I hate being at the receiveing end of a qmail server. Postfix works much better, and is far easier to configure.
