A smart host is a machine which accepts mails from you and then delivers to the world. It takes the trouble of doing DNS lookups for you. This saves your bandwidth and lets you use your mail server to do fancy rewriting/adding those nasty legal signatures......

AFAIK, you'd be better of using procmail for that.
