I dont know how its handle in Ubuntu
but in fedora if you do
$yum groupinstall marathi-support
it will install all required fonts as well keyboard layout for you, there should be something like this in ubuntu as well

Probably you should get much more information about the fonts which is used for open office and even in ubuntu linux.
Just go to synaptic package manager and search for ttf-indic-fonts package. Install it. it will give you a basic font support for indian languages font.
Even you can also install opentype font and truetype font which is unicode compatible in GNU/LINUX
Just check the link:
http://vietunicode.sourceforge.net/howto/fontlinux.html
Hope this will help you

Unfortunately scim has always been a problem with ubuntu and openoffice. I have scim setup and working nicely with gedit but no results with openoffice. But, to be honest I haven't pursued the matter too much either since I don't really use indic languages normally.
